  1. Rinse 300g rice well and tip into a saucepan with the mustard seeds and 600ml water and a pinch of salt. Bring to a boil over a high heat, then turn the heat to low, cover and cook for 10 to 12 mins until the rice is cooked through and all the water has been absorbed. Stir through 3 sliced spring onions.
  2. Meanwhile, heat 1 1/2 tbsp oil in a deep frying pan over a medium heat, then add 20g ginger, 2 crushed garlic cloves and 1 chilli (deseeded and finely chopped) and fry for 2-3 mins until fragrant. Stir in a 1/2 tsp turmeric and 2 tsp curry powder, then add 2 tbsp purée and 400g coconut milk, and bring to a simmer. Simmer uncovered for 5-8 mins until thickened slightly, stirring occasionally.
  3. Fold 220g spinach into the coconut curry and cook for 1-2 mins until wilted. Gently stir in the cod and cook for 3-5 mins until the cod is cooked. Stir through lime juice of 1 lime.
  4. Serve scattered with coriander, some lime wedges for squeezing over, and the cooked basmati rice.
