  1. Preheat the oven to 190°C, fan 170°, gas 5. Line a large baking tray with baking paper.
  2. Unroll 320g of pastry and cut out 20x5cm stars using a cookie cutter. Place on the lined baking tray and brush each star with 1 egg yolk to glaze.
  3. Bake on the middle shelf of the oven for 10-15 minutes until golden, crisp and risen. Transfer to a wire rack and cool.
  4. Top each star with a slice of brie and some cranberry sauce and garnish with some thyme leaves and orange zest. Serve straight away.
