Warming lasagne soup

  1. Heat 1 tablespoon of oil in a large pan, over a low heat. When hot enough, add 1 finely chopped onion, 1 finely chopped carrot, 1 finely chopped celery stick and 3 large cloves of crushed garlic. Cook for 5 minutes until softened.
  2. Once your vegetable mix is ready, add 500g of 5% mince to your pan and fry on a medium heat until golden. Stir in 3 tablespoons of tomato purée, 800g of chopped tomatoes and 300ml of beef stock. Then, add 1 tablespoon of dried mixed herbs, 1 tablespoon of Worcestershire sauce and simmer for 15 mins. Season with salt and pepper to taste.
  3. When your mince mixture is ready, snap 9 lasagne sheets into pieces, add to your pan and cook for 10-12 minutes until the lasagne sheets are al dente. You might need to add a splash more water to loosen the sauce/help cook the pasta.
  4. When the pasta is cooked, stir in 100ml of double cream, 30g of Parmesan cheese, 75g of grated mozzarella and fresh chopped basil leaves.
  5. Serve and enjoy!
