Winter warming recipes

Chinese-style chicken traybake
- First, heat the oven to gas 6, 200°C, fan 180°C. To make the marinade, whisk together 3 tablespoons of clear honey, 3 tablespoons of light soy sauce, ½ tablespoon of finely grated ginger, 2 crushed garlic cloves, ½ teaspoon of Chinese five spice and 3 tablespoons of water.
- Then, add 1kg of chicken drumsticks to the bowl and coat evenly in the marinade mixture. Once coated, add the chicken into a roasting tray. Make sure the tray isn’t too big, if there’s too much room, the marinade may burn.
- Roast for 35-40 minutes, making sure to turn halfway through until the chicken is cooked through, and they are sticky and glossy.
- Once the chicken drumsticks have 5 mins left, bring a large pan of salted water to the boil, and cook 4 nests of the noodles for 3-4 minutes until tender. Drain the noodles and serve with the chicken, and a handful of finely chopped spring onions.
