Broccoli mac and cheese

  1. Preheat the oven to gas 5, 190°C, fan 170°C. Boil the pasta in a large pan to pack instructions, add the broccoli for the last 4 mins of cooking. Drain, reserving 200ml cooking water.
  2. Return the pasta and broccoli to the pan and add the soup. Use the pasta water to rinse out the tin and add. Stir over a medium heat for 1-2 mins. Mix the grated cheese, add 150g to the pan and stir until the cheese has melted. Cook for 2 mins until the cheese is melted and the mixture is bubbling.
  3. Season with salt and pepper and spoon into a large ovenproof dish. Top with breadcrumbs and the rest of your cheese. Bake for 20–25 mins or until golden and the sauce is bubbling.
