Fancy Florentine pizza

  1. Prepare the pizza dough by mixing the flour, sugar, 2 teaspoons salt and yeast together in a bowl. Add in 300ml lukewarm water and stir in the oil to make a soft, but not sticky dough. You may need a little less or more water.
  2. Flour a work surface and tip dough out. Knead for 10 minutes. Transfer the dough to a clean mixing bowl and cover it with oiled clingfilm. Set aside to prove in a warm place for 1 hour, or until the dough has doubled in size.
  3. While the dough proves, cook the tomatoes in a pan on a low-medium heat until thickened and reduced. Season well.
  4. Preheat the oven to its highest setting. Divide dough into 4 and shape each into a ball. Roll each ball out thinly with a rolling pin and place on individual baking trays, lined with nonstick baking paper.
  5. Spread each pizza with tomato sauce, then scatter over spinach, mozzarella and ham. Bake, in batches if needed, for 8 minutes each.
  6. To finish the Florentine pizzas, crack an egg in the middle of each pizza. Continue baking for another 2-3 minutes, or until the egg is just set and the crust is crisp.
