Preheat the oven to gas 7, 220°C, fan 200°C. Cut 2 sweet potatoes into fries and toss in 1 teaspoon of oil. Place on a large baking tray and roast for 20 mins.
Preheat the grill to high. Cook 2 rib steak burgers under the grill for 5 mins on each side. Top with 1 slice of Cheddar and grill for 1-2 mins until melted.
Fill 2 brioche burger buns with mayonnaise, ketchup, gherkins, lettuce, the steak burgers, sliced onion and sliced tomato. Serve with the sweet potato fries and any extra lettuce and tomato on the side.
