  1. Preheat the oven to 200°C, fan 180°C, gas 6. Toss the veg with 2 tbsp oil; season lightly with salt, pepper and thyme. Arrange in a single layer over 2 large roasting tins. Cover with foil and roast for 45 minutes until tender.
  2. Meanwhile, in a small bowl, mix the tahini, and lemon juice with 4 tbsp warm water until smooth, then season to taste.
  3. Remove the foil from the roots, mix well, then return to the oven, uncovered, for a final 15 minutes or until golden. Transfer to a serving platter. Drizzle over the tahini dressing and sprinkle with the lemon zest and parsley to serve.
