Description

Seasoned, smoked, slow cooked beef brisket and a sachet of Texas style barbecue mop sauce.Inspired by American BBQ flavours our chefs have developed a rich and peppery dry rub in which our tender beef brisket is expertly seasoned. It is then hickory wood smoked for 2 hours then slow cooked for 6 hours to lock in flavour. Preparation and Usage

Sous Vide: This joint has been sealed in an airtight bag and slowly cooked to lock in juices and give a succulent texture.

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Not suitable for cooking from frozen. Follow the preparation guidelines above. Once defrosted use within 24 hours and do not refreeze. Defrost thoroughly for a minimum of 12 hours in the fridge. Keep refrigerated.

Oven cook

Instructions: - Remove outer packaging.- Place sauce sachet to one side.- Empty the contents of the pouch into an ovenproof dish, cover with foil and place in the centre of a pre-heated oven for 30 minutes, basting halfway through.- Remove from the oven and drain off 3/4 of the juices.- Open the sachet and spread half of the sauce over the joint, return to the oven for 5 minutes.- Remove from the oven, spread some of the remaining sauce over the joint and mix the rest of the sauce with the cooking juices in the dish.- Return to the oven for 5 minutes.- Remove from the oven, rest for 5 minutes then carve and serve with the sauce.200°C/Fan 180°C/Gas 6, 40 minsImportantNot suitable for cooking from frozen.
