For medium Lamb 25mins. per 500g plus 25 mins For well done lamb 30 mins per 500g plus 30 mins Pierce one small hole on the upside of the bag and place it upright on a roasting tray in the centre of a pre-heated oven for calculated time. Carefully cut open bag for the final 15-20 minutes of the calculated cooking time to allow the joint to brown. Allow to rest for 10 minutes before carving.
