Vanilla podsFoodie Fact:Vanilla pods contain the seed from the vanilla orchid plant. Real vanilla, like this, is expensive as each plant must be pollinated individually by hand. Then the green pods must be cured in the sun over several days, raised to high temperatures and 'sweated' in cloth to achieve the complex balance of sugars and aromatics, then dried and straightened out for several weeks. This process also transforms the green seed pods into the characteristic wrinkly, dark-brown pods.

Preparation and Usage

Usage:Vanilla Pods are an amazing ingredient. To help inspire you we have included a really lovely Pannacotta recipe below. To make your vanilla pods go further, after using, place in a closed jar of sugar and in a few days you will enjoy some amazing vanilla infused sugar.Pannacotta with Raspberries300ml Cream30g Caster Sugar1 Goodalls Vanilla Pod2 Leaf GelatineRaspberries, to serveMethod:1. Put the cream, sugar and the scooped out vanilla seeds from the pod into a saucepan and slowly bring up to a simmer. Turn off the heat and leave to infuse.2. Meanwhile put the gelatine leaves into a bowl of cold water and leave to soak. After 3-4 minutes it will have softened completely. At that point, take it out of the water, squeeze any excess liquid from it and put it straight into the saucepan with the hot cream.3. Whisk gently until the gelatine dissolves, if the cream has cooled down too much you might need to reheat it slightly with the gelatine.4. Pour into little ramekins, pretty glasses, little cups or whatever you fancy. Leave for 2-4 hours or more in the fridge to set. Serve with raspberries or some gorgeous sweet strawberries.
