Preparation and Usage
Remove beef from packaging and allow to rest at room temperature for 30 minutes before roasting.
Tip. For a deliciously rich gravy, collect meat juices at the end of cooking and add to your favourite gravy recipe.

Storage
Suitable for home freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown.
Not suitable for cooking from frozen.
Follow the preparation guidelines above.
Once defrosted use on the same day and do not refreeze.
Defrost thoroughly for a minimum of 24 hours in the fridge.
Keep refrigerated. Once opened, consume within 1 days and by 'use by' date shown.

Temperature: 130, 110, 1
Time: 3 hrs 40 mins.
Oven - 130°C/Fan 110°C/Gas 1 - 3 hrs 40 mins. Pre-heat oven to 130°C/Fan 110°C/Gas 1. Drizzle a little oil over meat and place into a hot pan, brown on all side. Place the joint in a roasting tray, season with salt and black pepper and add 200ml of cold water. Cover the tray with foil and place in the centre of the pre-heated oven for 3 hours 10 minutes. Remove foil from tray and cook for a further 30 minutes before removing joint from the oven. Allow the beef to rest in a warm place for 15 minutes and remove any string prior to carving.
