Where did I come from? My quinoa is from the Altiplano in Peru.

Recipes

Thai Green Curry with Quinoa

200g red quinoa
250g diced chicken breast or tofu
2 cloves garlic
1 large onion
1 can of coconut milk
Handful of fresh coriander
Tablespoon of grated or finely chopped ginger
1 stick of lemon grass (optional)
Chillies (1-2 depending on spice preference)

Boil the red quinoa in water with chicken or vegetables stock cube, depending on meat/tofu selection.
Put all remaining ingredients, except chicken/tofu, in blender and whizz until a smooth green paste is formed. Sauté chicken/tofu gently in an oil of your choice, adding (optional) one or two finely sliced chillies with seeds removed. Add Thai Green curry paste and stir, gently heating for a further few minutes until simmering.

Serve with generous spoonful's of the quinoa.


Preparation and Usage

Great hot or cold, quinoa can be used in starters and mains. Makes a wholesome base for a hearty salad.

How much should I cook? About 80g per head for a main dish. Cook up a batch and keep excess in the fridge for a quick quinoa fix another day.
