Deep Filled Irish Bramley Apple Pie

Ingredients:
Plain flour for dusting
2 x (375g) packs of shortcrust pastry
4 Keelings Irish Bramley Apples, peeled, cored and finely sliced
140g golden caster sugar
1/4 tsp each ground cinnamon, nutmeg and allspice
1 egg beaten with a splash of milk
Vanilla ice cream or whipped cream, to serve (optional)

Serves 6-8
Ready in 40 minutes
1 Preheat oven to 200°C/400°F/Gas 6. Squash the two blocks of pastry together and then cut off a third and set aside. Roll out the rest of the pastry into a large circle. Use it to line your pie dish, making sure that it overhangs all the way round. Cover and chill.
2 In a bowl, coat the apple slices with the caster sugar and spices. Roll out the rest of the pastry. Cut into a circle to make the pie lid, using the base of the tin as a guide, make the lid about 1 inch bigger. Arrange the apple slices in pie base. Cover the apples with the pastry lid, brush with egg wash then pinch the pastry together to seal. Pierce 2 slits in the top to allow steam to escape and bake for 30-35 minutes until golden brown on top. Serve hot or cold with ice cream or whipped cream.
