Recipes
Simple white loaf.
Preparation time: 55 minutes plus 1 hour 30 minutes rising
Cooking time: 30-35 minutes
Ingredients: 500g strong white bread flour, plus extra for dusting; 1 tsp fine salt; 1 sachet (7g) fast action dried yeast; 1tbsp caster sugar; 25ml vegetable oil, plus extra for greasing; 300ml warm water.
Method:
1. Combine the flour, salt, yeast and sugar in a large bowl.
2. Gradually add the oil and water to the flour, mixing until you have a soft dough.
3. Knead the dough on a greased surface for about 10 minutes until it's elastic and smooth.
4. Place in a large greased bowl, cover with cling film and leave it to rise for 1 hour.
5. Knead the dough again for 5 minutes, then shape into a log and place in a greased 900g loaf tin (approx. 22 x 11cm).
6. Cover loosely with oiled cling film and leave to rise for 30 minutes in a warm place.
7. Pre-heat oven to 200ºC/Fan 180ºC/Gas Mark 6.
8. Uncover and score a line down the centre of the dough with a sharp knife, then bake for 30-35 minutes. The loaf should sound hollow when tapped on the base.
9. Remove from the tin and cool on a wire rack.

Preparation and Usage
If using a bread machine, you can use the yeast direct from the sachet, adding it to your bread pan in the order specified by the manufacturer's instructions, keeping the yeast separate from the salt and sugar. There is no need to pre-mix or add sugar to activate the yeast, just add directly to the recipe.
