Salmon Fillets with Lemon Couscous
Ingredients
4 Donegal Catch® Atlantic Salmon Fillets.
400g couscous, juice and finely grated rind of 2 lemons, salt and pepper, 400g boiling water, 100g baby spinach roughly torn.
Top Tip
Before cooking, drizzle Salmon Fillets with soy sauce and freshly grated ginger for some added flavour.
Method
Prepare Salmon Fillets as per instructions. Place the couscous, lemon rind and juice, salt and pepper in a bowl and mix. Pour in water, stir and cover with cling film. Set aside until all the water has been absorbed and then stir in spinach.
To Serve
Plate the Salmon Fillets on a bed of the lemon couscous and serve.
