Chickpeas in salted waterChickpea, Carrot & Pea FalafelVegetarianThese are loaded with plant protein from chickpeas. This recipe is exploding with flavour from the fresh herbs to the fragrant spices. They could be used in salads too, or even in a pitta for an on-the-go lunch.Prep Time: 5 minutesCook Time: 25 minutesServes 15 peopleINGREDIENTS:30g Oats1½ tsp Cumin1 tsp Salt½ tsp Ground coriander½ tsp Mild curry powder¼ tsp Cayenne pepper15g Fresh parsley15g Fresh coriander2 tsp Epicure Chopped Garlic2 jars Epicure Chickpeas in Salted Water, drained and patted dry1 tin Epicure Petit Pois & Baby Carrots In Water, drained and patted dryMETHOD:Preheat the oven 200C. Line a baking tray with baking paper and set aside.Add all the ingredients to a food processor and pulse until the batter comes together.Take approximately two tablespoons in your hands and roll it into a falafel patty. Place the patty on the baking tray and repeat with the rest of the batter until you have about 15 falafels.Bake the falafel in the oven for about 25 minutes, until golden brown and nice and crispy on the outside.Serve the falafel warm with tahini yoghurt or tzatziki.TIP:If you rub a little oil in your hands when rolling the falafel, the mixture shouldn't stick to your fingers!Recipes from our kitchen to yours. #BeEpicurioushttps://epicurecooks.world/uk/recipes/ALTERNATIVELY FOR JUST CHICKPEAS:Place the sealed jar in warm water for a few minutes.
