Butter Beans in salted waterWarm Butter Bean Salad With Olives and TomatoesVegetarianGluten-freeThis Greek style warm salad is best served warm from the pan, but also excellent as leftovers and in packed lunches.Prep Time: 10 minutesCook Time: 20 minutesServes 2 peopleINGREDIENTS:3 tbsp Extra-virgin olive oil1 White onion, finely chopped2 cloves Garlic, crushed1 tbsp Epicure Double Concentrated Tomato Purée250g Tomatoes, cut into small pieces1 tin Epicure Organic Butter Beans in Water2 tsp Red-wine vinegar10 Epicure Stoneless Green Manzanilla Olives, roughly chopped1 tbsp Epicure Surfine Capers1 small bunch Dill, roughly choppedFeta, to finishMETHOD:Heat a tablespoon of olive oil over a medium-low heat, add the onion and cook until soft and sweet but not coloured.Add the garlic and cook for another three to four minutes.Add the tomato pure, stir until everything is coated, and then add the tomatoes and butter beans, stir and leave to warm a little. Then take off the heat and transfer to a bowl.Add two tablespoons of olive oil, the vinegar, olives, capers, dill and salt, to taste, to the beans and mix well.Sprinkle with a crumbling of feta alongside flatbreads or chunks of bread for dabbing up juices left in the bowl.TIP:This dish can easily be made vegan by using vegan feta.Recipes from our kitchen to yours. #BeEpicurioushttps://epicurecooks.world/uk/recipes/ALTERNATIVELY FOR PLAIN BUTTER BEANS:Place the sealed jar in warm water for a few minutes.
