Regional Information

The AOC Picpoul de Pinet covers 1,400 hectares around the Thau lagoon, on the shores of the Mediterranean Sea. The climate is mild in winter, hot and dry in summer, providing ideal conditions for the vines. The clay-limestone soils, facing the sea, benefit from a maritime influence that helps to regulate temperatures and preserves the freshness of the grapes.

Vinification Details

The harvest is carried out at night to preserve aromatic balance and prevent oxidation of the grapes. Once destemmed, the grapes are immediately pressed. A cold pre-fermentation maceration is carried out, followed by fermentation at a low temperature. The wines are then aged on fine lees in concrete tanks. After filtration, the wines are prepared for bottling on the estate.
