Preparation and Usage

Chef's tips1. A dark edge on the meat is no mistake! Known in Texas as the 'bark' - it adds bold flavour and incredible texture.2. The glaze can be used however you like! Glaze whilst cooking or use as a condiment to finish.3. Make sure to use a sharp knife to cut cleanly between the bones for neat portions and a professional finish.

Oven cook

Instructions: Remove outer packaging and place the sachet to one side.200°C/Fan 180°C/Gas 6, 55 mins. Empty the contents of the pouch into an ovenproof dish, meat side facing upwards and cover with foil. Place in the centre of a pre-heated oven and cook for 30 minutes. Remove from oven, remove the foil, then return to the oven for a further 20 minutes. Remove from oven and spread half of the glaze evenly over the meat using a pastry brush and return to the oven for the final 5 minutes.Serving suggestionServe with the remaining glaze on the side.ImportantNot suitable for microwave cooking. Not suitable for cooking from frozen. All appliances vary, these are guidelines only. Check food is steaming hot throughout before serving. Pinking will be visible around the edge of the meat upon cooking. This is from the smoking.

Storage

Keep refrigerated. Once opened, use immediately. Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 24 hours in the fridge. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above.
