Preparation and Usage

How to cook the perfect jointChef's tipsYou will need: A grill pan a pair of tongs & a baking tray.Preparation is keyBring your joint to room temperature by taking it out of the fridge 30 minutes before cooking. Use a paper towel to pat your joint dry before searing.Add the smaller marrow disc to the pan and heat for around 5 minutes to ensure it is piping hot.Plating up like a pro for the restaurant experienceResting: Before carving, ensure the joint is well-rested for at least 10 minutes and ideally on a warm plate or baking tray.Carving: Identify the direction of the grain, which are the parallel fibres running through the meat, and cut against the grain into slices with a thickness of your liking.Plating: We would recommend serving your slices on warm plates. Enjoy with the creamy melt enriched with peppercorns to replicate the full restaurant experience from the comfort of your own home.Tips for cooking the perfect steakSearing: The fat is scored to allow it render more easily. Allow the joint to build up a nice seared crust on a high heat by placing the joint, fat side down in the pan and then flipping onto the underside.

Oven

Instructions: Remove all packaging. Allow joint to rest for 30 minutes at room temperature before cooking. Add smaller marrow disc to a heavy based pan over a high heat for 2-5 minutes until melted and piping hot. Place joint fat side down in the pan and sear for 2 minutes and then turn over and cook for a further 1 minute. PAN FRY 3 mins Transfer the joint to a pre-heated roasting tray and place in the centre of a pre-heated oven. Cook for a further: OVEN 200C/Fan 180C/Gas 6 17-23 mins (rare) 27-33 mins (medium) 37-43 mins (well done). Add the butter on top of the joint for the last 5 minutes of cooking. Remove from the oven. Allow joint to rest in a warm place for 10 minutes before serving.

Microwave

Instructions: Not suitable for microwave cooking.

Storage

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Follow the preparation guidelines above. Defrost thoroughly for a minimum of 24 hours in the fridge. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.
