Preparation and Usage

1. Place skin down in a cold pan & bring up the heat2. Brown both sides, then finish in the oven

Keep refrigerated 0°C to 4°C. Once opened, use within 24 hours and by the use by date. Suitable for home freezing. Freeze on the day of purchase and use within 1 month. Defrost thoroughly in refrigerator before use. Do not defrost in microwave. Use within 24 hours of defrosting.Once defrosted do not refreeze.

Oven cook

Instructions: For best results (as all appliances may vary the following are guidelines only)Preheat oven to 200°C / Fan 180°C / Gas Mark 6. Score the fat of the duck in as criss-cross pattern and season with salt and pepper. Set aside sachet of plum sauce for later. Place fillets fat side down on a cold dry pan and cook over a medium heat. As the pan heats up the fat will start to render from the fillets. Cook until fat on the fillet is golden in colour, approximately 6 minutes. Turn fillets over, continue to cook for 2-3 minutes (be sure to save the fat from your pan for wonderful roast potatoes and vegetables). Place fillets on a roasting tray and cook in the centre of the oven for 15-20 minutes. Remove from the oven, drizzle the sauce over the fillets and cook for a further 5 minute. Allow fillets to rest for 5 minutes before consumption.
