Vinification Details
- The grapes were carefully selected and sorted before being lightly pressed to preserve their fruit. The clear juice was then fermented in stainless steel tanks for 15 days. After fermentation the wine was sulphured and left on the lease for 4 months. A number of components from different picking dates and harvested separately were then blended shortly after fermentation.
