Why not try
Roasted glazed carrots with honey and mustard.
Cooking time: 25-30 minutes.
Ingredients:
500g carrots, trimmed and washed.
1tbsp. olive oil.
1tbsp. clear honey.
1tbsp. wholegrain mustard.
1/2tbsp. chopped parsley.
Method:
1. Preheat the oven to 200C/Fan 180C/Gas 6.
2. Put the carrots in a shallow roasting or baking tray.
3. Mix together the oil, honey, mustard and season to taste.
4. Pour over the carrots in the tray and turn to coat in the mix.
5. Roast in the oven for 25-30 minutes, turning halfway through, until the carrots are tender and starting to caramelise.
6. Remove from the oven and scatter with chopped parsley to serve.
