Vinification Details

Nocturnal harvest to enter the cellar of the freshest berries possible and thus preserve all the aromas of the grape variety. Pre-fermentation maceration, enzymes and aromatic yeasts. Control of temperatures throughout the winemaking process.

History

The appellation dominates the Etang de Thau and its oyster huts. Here, the culture of the vine is centuries old. Some plots have retained their area and exposure from Antiquity. Today, Picpoul de Pinet is a single grape variety: white piquepoul. Its floral and citrus scents, its vivacity in the mouth make it an ideal companion to accompany shellfish and oysters from Bouzigues.
