Vinification Details

Our winery obtains its sparkling wines directly from the must, which is obtained with a soft extraction from the grapes. Only the must from the first pressing, the so called ‘free-run must', is collected. Musts are stored, in order to have them available all-year-round, as this is the only way to fully preserve the freshness and fragrance of the grape juice. After the wine base has undergone the first fermentation, the must is added. It is only after this phase that the second fermentation is carried out.

History

From prestigious producer Cantine Maschio. Its peculiar history began in 1973, when Bonaventura Maschio turned his family's century-old distillery into a winery with cutting-edge technology and production processes, surprisingly avant-garde for the time. Over the decades, Cantine Maschio has gained the role of main player in the sector.

Regional Information

Prosecco DOC wines originate in a fascinating territory that includes 9 provinces between the regions of Veneto and Friuli-Venezia Giulia (North-Eastern Italy). In 2009, the Prosecco “Controlled Designation of Origin” was established to protect the Prosecco appellation of origin. Glera is a grape variety with ancient origins, already known and cultivated in Roman times. The production of Prosecco must include at least 85% of Glera grapes.
