6 Eggs
6 Tablespoons Cocowel Organic Virgin Coconut Oil (90g)
6 Tablespoons cream (90g)
2 Tablespoons sugar
1/2 Tablespoon salt
6 Tablespoons sifted Coconut Flour (45g)
1 Teaspoon baking powder

Blend together eggs, oil, cream sugar and salt.
Combine Coconut Flour with baking powder and thoroughly mix into batter.
Heat one tablespoon Coconut Oil in a skillet. Spoon batter onto hot skillet making pancakes 2 1/2 to 3 inches in diameter.
Batter will be thick, but will flatten out when cooking. Makes about 25 pancakes.

Coconut Flour Coffee Cake
4 Eggs, separated
1 Tablespoon cream of tartar
4 Tablespoons Cocowel Organic Virgin Coconut Oil (60 g)
3 Tablespoons raw honey, (45 g)
1/2 cup sifted coconut flour (120 g)
2 Teaspoons vanilla extract
1/4 Teaspoons baking soda
1/8 Teaspoons salt

1/4 cup Cocowel Organic Coconut Sugar (60 g)
1/4 cup Cocowel Organic Virgin Coconut Oil
2 Tablespoons sifted coconut flour (30 g)
1/2 Teaspoons ground cinnamon

Preheat oven to 180°C. Grease the bottom and sides of a 4x8 inch rectangular loaf pan with coconut oil. In a large bowl combine the egg whites and cream of tartar. Whip until it stiffens. In a bowl, Combine honey with coconut oil. Mix in the egg yolks. Add to the mixture, coconut flour, vanilla, baking soda and salt. Mix until combined. Mix the batter into the egg whites starting with a little bit at a time. Stir batter until completely mixed. Pour the mixture into the loaf pan. In a small bowl mix together all the ingredients for the topping. Spread the mixture over the batter. Swirl parts of the topping into the batter. Bake for 30 minutes. The cake is done when a toothpick is inserted and comes out clean. Let the cake cool before slicing and serving.
