Recipe: Chocolate Biscuit Wedges
Prep and bake time: Up to 30 minutes.
Serves: 12
Ingredients
125g butter
50g caster sugar
6 tablespoons of chocolate spread
2 tablespoons of milk
250g digestive biscuits, crushed
50g cake crumbs
50g Shamrock Glacé Cherries, Chopped
50g Shamrock Californian Raisins
150g plain chocolate, grated

Method
1. Line and grease a 20cm/8" sandwich tin. Place the butter, sugar, chocolate spread and milk in a saucepan and heat gently to combine. Add the crushed biscuits and mix well.
2. Add the remaining ingredients (except chocolate) and stir until thoroughly mixed, then press into the lined sandwich tin.
3. For the topping, melt the chocolate in a bowl set on a pan of simmering water.
4. Spread the chocolate topping over the biscuit mixture and allow to cool, chill in the refrigerator until set, then cut into 12 wedges.
